But is there any means of accessing the data on the drive, that wasn't zapped by the installer, from within the USBized Live Fedora?

Not that I know of :(
The persistent overlay is utilized by the device-mapper, and I really have no idea how it works. I asked a couple of people if it would be possible to extract data from the overlay, and none of them had an answer...

When you're booted into the liveusb, you should be able to access the data on stick itself. I recall opening up nautilus, and having the drive already mounted for me.
