That is by choice. We have an issue: https://github.com/stratis-storage/stratisd/issues/729.
The hyphens are an annoying artifact from a particular version of the UUID spec, where the hyphens separate different regions of the UUIDs which have different meanings. For most UUID specs, the regions are totally spurious. We can document that this is our decision in the design docs, if we do not do so already.
