I'm experimenting with Gnome (I'm a long-standing KDE user), but can't figure out how to save and restore a login session, i.e. restore all open apps after logging in, including window placement on several virtual desktops.
Surely this is possible, but how?

I assume it is similar to Mate.
System -> Preferences -> Start Up Applications V Options Tab

There is no "System" menu. The Settings menu has no such option.

The "dconf-editor" may have what you need.
After start up, select
Org -> gnome -> gnome-session
There are AutoSave options for "always" and "one time".

Thanks. I might have a look but for now I've fled back to the familiarity of KDE. Better the devil you know :-)

I don't know of any way with default gnome.
You can use tweaks to set autostarted applications and it will launnch them on login, but it would be up to the application to save/resume it's state.
