Let's say I have nodes A and B setup in a MMR configuration(providers). Is it possible to have node C configured as a consumer for both A and B? I am wanting to have a high availability setup so node C still receives updates if one of the providers goes down.

Yes it is perfectly normal to use that type of configuration.
