Since IcedTea/OpenJDK is part of Fedora 9, I presume that GPL + Classpath Exception is a good licence, but I can't find it in the list here: http://fedoraproject.org/wiki/Licensing#Good_Licenses

Yes, it's fine. Just use:
License: GPLv2 with exceptions
(where GPLv2 is the correct version of GPL)
