I think that you will have more luck if you ask in Spanish mailing list, such as:
"Fedora discussions in Spanish" fedora-es-list@redhat.com "Latin American Fedora Ambassadors" embajadores-fedora-latam@redhat.com "Soporte de Usuarios Fedora" usuarios@proyectofedora.org
You can go even further and look for central American List regarding free software: "Comunidad de Software Libre de Centroamérica" comunidad@softwarelibre.ca
There was a education gathering in Mexico with virtual access called edusol about one week ago. Probably it will be worth googling for that.
Hope this pointers lead you in the right direction.
Best regards

I might also ask the http://teachingopensource.org community (which is the link I gave Alejandro on IRC earlier, and what Karlie wrote about from her blog post on NYSCATE last week) whether any of them are from LATAM.
I think to find Spanish-speaking teaching-open-source communities, asking Spanish-speaking open source communities and teaching open source communities is probably a good bet. :)
