Is there any way to stop dnfdragora-updater to show in the taskbar? I can't find any setting in the main dnfdragora gui and right-click/exit doesn't prevent it to show up again at next startup.

You can uninstall the dnfdragora-gui package, the updater is the only thing it really contains.
I requested a rename to a less misleading package name 6 months ago: https://bugzilla.redhat.com/show_bug.cgi?id=1448812 but I am still waiting for a reply from the maintainer.
